Job Title: Experienced Prep Cook – Build the Foundation of Our Most Iconic Dishes

We’re currently seeking an experienced and detail-oriented Prep Cook to help lay the foundation for some of our most exciting and talked-about menu items — including our Tempura Chicken Parmesan, Ube Cheesecake, and Truffle Mushroom Lasagna.

Position Summary:

As a Prep Cook at Sesamo, you'll be responsible for executing daily prep tasks that directly impact the quality and consistency of our signature dishes. You must have prior experience with pasta making, knife skills, and protein/seafood prep. You’ll work closely with the sous chef and line cooks to ensure the kitchen runs efficiently and every dish has a strong foundation.

Key Responsibilities:

• Pasta Making: Roll, cut, and portion various fresh pastas (filled and extruded) with consistency and care.

• Ingredient Prep: Wash, peel, and chop vegetables; portion meats, poultry, and fish; clean shellfish; and prepare sauces, marinades, and garnishes.

• Recipe Execution: Follow prep lists and recipes accurately for dishes including Tempura Chicken Parm, Ube Cheesecake, Truffle Mushroom Lasagna, and more.

• Kitchen Organization: Maintain a clean, organized, and well-stocked prep station at all times.

• Storage & Labeling: Properly label, store, and rotate ingredients according to food safety standards.

• Team Support: Collaborate with line cooks and chefs to anticipate prep needs, restock during service, and assist wherever needed to keep the kitchen flowing.

Ideal Candidate:

• Experienced: At least 2 years of experience as a prep cook in a high-volume or fine-dining kitchen. Pasta-making experience is required.

• Skilled & Efficient: Comfortable with all aspects of prep work — knife skills, protein portioning, seafood cleaning, sauce prep, and more.

• Detail-Oriented: You understand that the quality of prep work sets the tone for every dish and take pride in doing it right.

• Organized & Reliable: You work clean, manage your time well, and take ownership of your station.

• Team Player: You communicate clearly, stay cool under pressure, and support your team without ego.
